Sanu was born in a village in Kochi, Kerala also known as the ‘Land of Spices’, famous for its food with unique style and taste. Inspired by his mother, he discovered his passion for cooking at the tender age of 10 by making Kerala dishes like appam, dosas and vadas. Sanu received his Bachelors in Hotel Management from Oxford College, Bangalore, and started his career as a Chef’s assistant in Grand Hyatt, Mumbai. During his tenure in Mumbai, he learned North Indian and Chinese cuisines under the guidance of some of the highly seasoned Chefs. Later on he joined as a Chef in Costa Cruise ship, Italy. There he further perfected his continental culinary and kitchen management skills. A few years later, Sanu emigrated to the United States of America and started working at the Hyatt Regency in Dallas. Sanu’s ambition to own a restaurant in Dallas was finally fulfilled through ‘Bayleaf Garden’, a space inside the Texaco on the corner of Old Denton Rd. and Rosemade, Carrollton.
